Vegetable or crudité trays usually contain fresh cut-up or bite-size vegetables such as carrots, cauliflower, and celery. Often, they also contain a dip for the veggies.
Spread the vegetables across a large baking tray and toss with the oil and a generous amount of salt and pepper. Roast for 25 minutes, or until the vegetables are slightly browned and tender.
5. Remove the tray from the oven, season generously with salt, pepper and lemon zest. Squeeze over the lemon juice and give everything another lug of olive oil.
